Continuing with our theme of green, I've included a nice vegan (cooked) broccoli and pine nut sauce recipe. If you're preparing for one feel free to halve this recipe.
Broccoli and Pine Nut Sauce
Ingredients
- 1 cup pine nuts
- 1 lemon juiced
- 1 inch peeled organic fresh ginger
- 1 clove garlic
- 1/2 teaspoon ground nutmeg
- sea salt & black pepper
- water for texture consistency
Directions
- Place all the ingredients in food processor and blend until chunky.
- Add water and blend to nice smooth sauce consistency.
- Pour onto fresh broccoli or dip the broccoli into the sauce. enjoy!
