Sometimes we all struggle to get our green vegetables in, especially when winter rolls around. Here's a tasty, and quick recipe that will turn your struggle into a craving!
Asparagus with Cranberries and Pine Nuts
Ingredients
- 1 bunch asparagus
- 3 tablespoons olive oil
- 1/3 cup pine nuts
- 1/3 cup dried cranberries
- 1 pinch salt
Directions
- Trim the woody root ends from the asparagus and toss. Steam the spears until tender.
- Heat the coconut oil in a skillet and add in the pine nuts and cranberries.
- Cook until pine nuts start to change color and then add the steamed asparagus and salt.
- Sautee until well coated and asparagus is bright green color. Presto!
